This recipe is very easy and you do not need a lot of ingredients for it. You will need masa harina to make tortilla chips. You can get this from a Latin food store. Combine three cups of it with half a tablespoon of salt and stir in enough water to get a thick dough. If you like, you can also add a little oil.
The dough should taste slightly salty instead of very salty. Make two inch balls out of the dough and press them into little flat circles using wax paper and a tortilla press. If you do not have a tortilla press you can use a pair of heavy pots.
Heat a frying pan until it is really hot, then fry the tortillas until they are golden brown. This takes half a minutes per side. Cut each one into wedges when they have cooled down a bit.
Heat three inches of vegetable oil in a deep skillet or heat up your deep fat fryer. Fry the tortilla chips in batches. Make sure you do not overcrowd the pan and keep an eye on them while they cook. They might need to be flipped partway through the cooking time.
How to Serve Tortillas
Drain the tortilla chips on paper towels and serve them with a mild or spicy salsa. You can sprinkle some salt over the chips before serving them if you like.
Something I love to do is make a tortilla pizza with my tortillas. Not only is this low in both calories and carbs, but it makes such a lovely crunchy pizza base. Top the tortilla with tomato sauce or cream cheese, then add finely sliced meat or seafood plus veggies, some grated cheese and perhaps some oregano or chili flakes, and then bake in a 400 degrees F oven for 15 minutes or until crispy. This is a dish I make often, and I mean at least once a week.
